Egg cold storage is one of the fields of activity where Highend produces solutions professionally, as in all kinds of agricultural and animal food.
In our country and in many countries, eggs are not washed and oiled . There is neither an obligation nor a common practice regarding the environmental conditions under which the eggs collected from the hen house will be stored until they are offered for consumption. In many countries, eggs are washed after collection; In some countries it is stored in temperature and relative humidity controlled rooms after being lubricated.
Eggs stored under inappropriate storage conditions deteriorate in a short time and become harmful to health. Conservation methods for prolonging the durability period of the egg are of great importance. Due to its natural structure and composition, the egg can be slightly protected against microbiological spoilage. However, eggs are perishable foodstuffs. If the necessary precautions are not taken, there will be significant losses in egg quality in the period between collection and consumption. All the measures that can be taken to protect the quality of the egg do not stop the development of the egg, it can only delay it. The nutritional value of the egg decreases significantly as a result of being under the influence of various environmental factors during the period from its formation to consumption. For this reason, preserving the freshness of the egg is important in terms of food hygiene. From the date of ovulation, biological, chemical and physical changes occur in the egg.
Eggs kept under inappropriate storage conditions deteriorate in a short time and become unhealthy. For this reason, methods for prolonging the shelf life of the egg are important.
The purposes of these methods can be grouped under the following headings:
- To prevent bacterial contamination of the eggshell
- prevent the spread of bacteria
- delay the growth of bacteria
- extend shelf life
most commonly used method in egg preservation is refrigeration. Eggs can be best stored in suitable cold stores . Eggs that have been kept in the refrigerator for a week are fresher than eggs that have been kept at room temperature for a day. Eggs to be placed in cold storage should be fresh, clean and dry placed in new packages. Cracked and broken eggs should not be stored. Adequate space should be left between the egg packages placed in the warehouses to ensure air circulation; however, the airflow must not come directly onto the packaging.
temperature of cold stores should be between -1°C and -2°C, and the relative humidity should be at least 90% in order to extend the storage period and minimize quality loss . Eggs can be stored up to 6-7 months in cold stores under suitable conditions . For in-shell eggs to be stored commercially for 6 months or longer, -1ºC to 0ºC and 70-80% relative humidity are recommended.
In cold storage , egg shells are stored by coating with oil to keep quality loss to a minimum and to extend the storage period. Colorless and odorless mineral oils are used for this purpose. The shell is coated with oil by dipping a clean and dry egg in this oil or spraying it on the egg; however, it is also reported that such an application does not provide a microbiological advantage. The temperature of the oil to be used; should be several degrees higher than the temperature of the egg. A kind of pasteurization is applied by immersing the egg in thermostabilization water or oil at 60°C for 15 minutes. It is then cooled and taken to storage tanks. The warehouse must be equipped with a suitable ventilation system to prevent mold growth from excessive humidity. It is important to ensure air circulation in the warehouse in order to maintain the desired relative humidity during storage. If the egg is kept at ambient temperature after it is taken out of cold storage, the condensed water accumulating on the shell will cause microorganisms to reproduce rapidly, so the cold chain must be preserved until it reaches the consumer. In storage conditions; By adding ozone and CO 2 to the atmosphere, the shelf life of the egg is extended.
Under home conditions, eggs should be stored in the refrigerator (0–5°C) without washing them in the original cardboard box to prevent them from spoiling quickly. Therefore, the egg should be washed when it is to be used.
